Love the summer and all the good times with great foods from the grill? You may find this recipe has
some surprisingly familiar flavour notes but with a healthier twist. Using marinated carrots instead of
hot dogs, these are fun and you can enjoy seconds.

Ingredients

8 medium sized carrots

1 cup no-salt added vegetable broth

¼ cup balsamic or apple cider vinegar

2 tbsp low-sodium tamari
-
2 tbsp molasses or maple syrup

1 tbsp smoked paprika
-
2 tsp ground cumin
-
3 tsp mustard powder
-
1 tsp ground coriander powder
-
2 tbsp garlic powder
-
1 tbsp onion powder
-
¾ tsp liquid smoke
-
pinch ground cloves
-
8 whole wheat hot dog buns
-
½ cup red onion, diced fine
-
½ cup yellow mustard or hot mustard

½ cup cherry ketchup (see Note) or regular ketchup

½ cup sweet relish

Directions
Trim the ends of the carrots. Do not peel. If they are very uneven, trim a bit and use the trimmings in a salad. Set aside.
Add marinade ingredients to the saucepan and whisk until mixed. Add carrots. Heat to a light boil over medium high heat. and turn down to low heat and cook carrots for 10 minutes until fork tender.
Heat outdoor grill to 500°F (260°C). Place carrots on grill until grill marks appear (3-5 minutes), repeat with other side. Remove carrots from grill ands serve in buns with toppings as desired.
