Don’t you love apple time? So many varieties and such sweet flavours. This recipe was adapted from one that King Arthur Baking Company. Substituting many ingredients to make this one vegan and oil free, was really fun and tasty too. Lower in sugar and using the natural sweetness from apples and spices to make this baby aromatic and tasty.

Benefits: Using maple flakes in place of sugar, this lowers the sugar and adds maple flavour. This one has high fiber and zero cholesterol and lower in calories. Yeah. Who knew you could eat dessert and be healthy? Dairy free and vegan too.

Ingredients

4 tablespoons almond butter + 2 tablespoons water (mix together in a small bowl until fully incorporated)

½ cup maple flakes (or ½ cup sugar)

1 teaspoon cinnamon

½ cup room temperature water

3 medium apples (330 grams)

¾ cup applesauce (150 grams) homemade or store bought

½ cup maple flakes

2 flax eggs ( 2 tablespoons golden flax seed plus 6 tablespoons water) Mix and set aside

1-2 teaspoons cinnamon
-
½ teaspoons mace
-
¼ teaspoon cardamom

¼ teaspoon allspice

1/8 teaspoon cloves
-
1 teaspoon baking soda

1 ½ cups all purpose flour (177 grams)

1 medium apple (less top off from topping) chopped (150 grams)

½ cup pecans or walnuts (85 grams) optional

Directions
Preheat the oven 350F (177C)
Place parchment paper on the bottom of the springform pan. See tip below.
Mix all of the topping ingredients (except the apples) in a bowl until fully incorporated and set aside.
Cut the top off of one of the apples (about 3/8 inch thick). If it is lopsided, level it and use the pieces in the cake.
Slice the two apples that do not have the top cut off. Slice into 1/4” slices. Don’t worry if the apples turn brown, they are going to be baked and brown anyway.
Place the apple top in the center of the parchment paper covered pan. Layer all the apple slices around the center and overlap them to cover the entire bottom of the pan. Make sure they go all the way to the edges.
Pour the topping mixture over the apples. Spread evenly to cover all the fruit. Set aside.
Cake
In a large mixing bowl, beat by hand or with a mixer the applesauce, maple flakes, flax eggs and spices until fully mixed.
Whisk the flour and baking soda together and add to the applesauce, maple flakes mixture. Add the chopped apples and nuts to the batter.
Spoon the batter on top of the apples in pan and spread evenly.
Bake for 50-55 minutes. A wooden skewer should come out clean to test doneness.
Remove the cake from the oven. Let cool for 5 minutes and run a dull knife around the inside of the springform pan to loosen.
Let cool for 5 more minutes and turn it out onto a serving plate, bottom side up and scrape rest of sauce and place onto cake top.
Serve the cake warm and decorate as desired.
