This is a classic French dish. It is so flexible and can be flexed to include or exclude any vegetables in season or for your likes or dislikes. The nice thing is that most of the vegetables can be consumed raw. This is healthy and faster to prepare. You can alternatively blanch some veggies if you think they are too hard to chew for children or adults who have issues chewing.
Flavours: Fresh veggies with the sweetness of carrots and sweet peppers, the tartness of grape cherry tomatoes as well as the great crunch of cauliflower and broccoli. The cool spicy white dipping sauce makes these veggies addictive as well as tasty.
Benefits: Low in calories and high in fiber and vitamins and minerals make this snack a great alternative to chips.

Ingredients
- Cherry or grape tomatoes (125 grams)
- Cauliflower florets (150 grams)
- Broccoli florets (175 grams)
- Carrots – any colour (200 grams)
- Small sweet peppers (100 grams)
- Bok Choy
- Celery
- Zucchini
- Aubergine (eggplant)
- Larger Green, red or yellow peppers
- Hot peppers
- ½ to ¾ cup of filtered water
- 1 cup shelled hemp hearts
- ¾ teaspoon of tamari, soy sauce or salt
- 2 cloves of garlic (if you are not a fan of spicy, use 1 teaspoon garlic powder instead)
- 1 teaspoon onion powder
- 1 teaspoon ground mustard seed
- 3 tablespoons of apple cider vinegar or lemon juice
- 1 teaspoon of dried dill, crushed
- ½ teaspoon cayenne pepper or red pepper flakes (optional)
- ½ cup of purple onion diced

Vegetables
Cut the vegetables into bite sized sticks so that they can be easily picked up and dipped into the sauce. Arrange the veggies around the dipping sauce bowl and serve immediately. This is incredibly nutritious and a great alternative to chips. Nutrition on this just a suggestion from those included in the picture.
Hemp Heart Dip
Blend and set aside until needed. There will be more than enough for the crudité platter presented here. Can be refrigerated for 1 week to 10 days.

For the vegetable platter:
Time: 20 minutes
Yield: Platter of vegetables and1 ¾ cup dipping sauce
Equipment: food processor for sauce and knife for vegetables
For the Hemp Heart Dip:
Time: 5 minutes
Yield: 1 3/4 cup
