Flavours: Warm aromatic curry and cumin and the sweetness of carrots are balanced by the smooth texture of chickpeas or white beans.

Ingredients

2 medium carrots, sliced

1½ tsp onion powder

1½ tsp ground cumin
-
1-2 cloves garlic, diced

1 can, chickpeas or white beans, no salt added; rinsed and drained.

3 tbsp lime juice
-
Salt and pepper to taste
-
2-3 tbsp fresh cilantro
-
Fresh veggies to decorate
Directions
In a skillet, place the carrots, onion powder, cumin and garlic and add ¼ cup tbsp of water. Simmer and cook over medium-low heat for 10 minutes or until carrots are tender.
Place lime juice, chickpeas or beans into the food processor and blend until smooth. Add salt and pepper and cilantro and pulse to combine.
Chill for 30 minutes and serve with fresh veggies.
