This is a recipe that is a favourite around the world but may have originated from an Italian immigrant to the United States. It has to be included though because thanks to immigrants, North America is a better place. This is an adaptation that is dairy-free and delicious in every bite.

Ingredients
- 15 oz (425 g) canned white beans or cannellini beans
- ⅓ cup (20g) nutritional yeast flakes
- 2 tbsp (30 ml) apple cider vinegar
- 2-4 cloves garlic, pressed
- ½ tsp tamari
- 1½ (355 ml) cup water
- ½ cup raw unsalted cashews, soaked
- 1½ tbsp (22 ml) apple cider vinegar
- 1 tsp tamari
- 4-6 tbsp (34-51 g) nutritional yeast
- 2 tsp ground flaxseed
- 1 tsp ground ginger
- ⅛ tsp ground nutmeg or mace
- 2 tbsp (40 g) hemp seeds, organic
- ⅛ tsp ground hot peppers
- 3 tbsp (21 g) onion powder
- ¼ cup (19 g) garlic powder

16 oz (200 g) fettucine noodles
- Dried basil
- Fresh oregano leaves
- 8 cherry tomatoes (112 g), sliced

Directions
Sauce
Place the ingredients into the food processor and process until smooth. Pour ingredients into a saucepan and over medium heat, whisk until the beans form a thick sauce. Set saucepan aside.
"Cheese"
- Place all ingredients into a food processor and pulse until it has a grainy consistency.
- Add the “cheese” into the sauce and mix thoroughly. If it is too thick, add a tbsp of water at a time to get the desired consistency.
Noodles & Garnish
- Boil noodles in 2-3 litres of water on medium high heat. As the water boils, take the lid off to keep it from boiling over and turn down to medium heat. Cook until al dente, about 10-12 minutes.
- Drain most of the water from the noodles using a colander, leaving just a little water in the pot so they do not stick together.
- Mix the sauce in with the noodles. Serve hot with a pasta server. Serve with thinly sliced tomatoes, dried oregano and fresh basil and oregano leaves on the plate as a garnish.
