Grilled corn is such a treat in season. Summer at its best. It is a healthy food and fun to eat. This can be a side dish for other summer barbeque dishes.

Ingredients

4 cobs of corn with the husks on and silk off

1/3 cup fresh squeezed lime juice

Zest from 3 organic limes

1 teaspoon ground chipotle powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon tamari
Directions
Pull back the husks but leave them on and tie them with cotton strings. Soak in water for 30 minutes.
Grill corn on each side on a medium high heat setting on the grill for 10-15 minutes each side. Watch closely that the husks don’t burn. Pour sauce onto grilled corn and give each person a bowl to dip the corn into Tofu Mayonnaise.
Place all ingredients into a food processor or a blender and blend for 1-2 minutes until smooth and well incorporated.
