These asparagus spears are easy to make and so tasty. When asparagus is plentiful, this is a go to meal.

Ingredients
- 12 asparagus spears
- 2 tbsp hemp hearts
- ¼ cup nutritional yeast
- 2 tsp garlic powder
- ⅛ tsp black pepper
- 1 tsp smoked paprika
- ¼ cup whole wheat breadcrumbs
- juice of ½ lemon
- zest of lemon
Directions
- Preheat oven to 350°F (177°C).
- Wash asparagus and hold near the end and snap off the tough end. Discard the ends. Do not dry off.
- Place rest of ingredients in a bowl or a resealable bag and mix. Place the spears in the bowl covered in plastic wrap or the resealable bag and shake until the spears are covered in the herb mix. Carefully remove them and place them side by side on the cookie sheet.
- Bake for 20-25 minutes until crispy. Serve hot with lemon juice and zest.
