Hot Garlicky Cauliflower Drumettes
If you love cauliflower hot wings but want something healthier, this is your recipe. Easy to make and you can make them as hot as you like. They are fast to make and are all oven baked. No messy deep frying needed.

Yield: 4 servings 20-25 drumettes depending on size cut and 1 cup sauce
Total time: 45 minutes
Equipment: Saucepan, whisk, large mixing bowls, large pan, foil, tongs
Preheat oven to 400°F (204°C).
1 raw cauliflower, florets cut into bite sized pieces
2 tbsp apple cider vinegar
2 tsp Harissa ground pepper
1 tsp Japanese Five Spice
3 tbsp maple syrup
1 cup passata tomato sauce
1 tsp ground mustard
½ tsp ground ginger
2 tbsp miso bean paste
1 tbsp Dijon mustard
4 cloves garlic, pressed
½ small onion, diced fine
1 tbsp onion powder
2 tsp smoked paprika
1 cup water
ground black pepper to taste
3 drops liquid smoke (optional)
diced and shallot rings
diced purple onions
mini sweet peppers
small tom tomatoes
1 tbsp of each black and white sesame seeds
Place cut cauliflower pieces in a large pan and cover with foil and bake for 20 minutes. Remove foil and increase heat to 450°F (232°C) and bake with foil off for 10 more minutes until the cauliflower is browned.
While cauliflower is baking, place all sauce ingredients into a medium saucepan and heat to medium and cook and stir occasionally for 5-7 minutes. Remove from heat and set aside.
Remove drumettes from the oven and either put them on serving plates and pour sauce on or put drumettes in a bowl and pour sauce over and toss before serving. Garnish with small tomatoes, diced onions, small peppers, shallot rings and celery greens.
