Ingredients

1 raw cauliflower, florets cut into bite sized pieces

2 tbsp apple cider vinegar

2 tsp Harissa ground pepper

1 tsp Japanese Five Spice

3 tbsp maple syrup
-
1 cup passata tomato sauce
-
1 tsp ground mustard
-
½ tsp ground ginger
-
2 tbsp miso bean paste
-
1 tbsp Dijon mustard

4 cloves garlic, pressed
-
½ small onion, diced fine
-
1 tbsp onion powder
-
2 tsp smoked paprika
-
1 cup water
-
ground black pepper to taste
-
3 drops liquid smoke (optional)

diced and shallot rings
-
diced purple onions
-
mini sweet peppers
-
small tom tomatoes
-
1 tbsp of each black and white sesame seeds

Directions
Preheat oven to 400°F (204°C).
Drumettes
Place cut cauliflower pieces in a large pan and cover with foil and bake for 20 minutes. Remove foil and increase heat to 450°F (232°C) and bake with foil off for 10 more minutes until the cauliflower is browned.
Sauce
While cauliflower is baking, place all sauce ingredients into a medium saucepan and heat to medium and cook and stir occasionally for 5-7 minutes. Remove from heat and set aside.
Remove drumettes from the oven and either put them on serving plates and pour sauce on or put drumettes in a bowl and pour sauce over and toss before serving. Garnish with small tomatoes, diced onions, small peppers, shallot rings and celery greens.
