This is a plant-based version of an iconic favourite. With no butter, it is healthy and leaving the skins on the red potatoes improves the vitamin and mineral content. Plus, less work! Winner.
Flavours: Lemon notes along with the satisfying texture and warmth of fluffy mashed potatoes.
Benefits:With no butter, replacing salt with tamari and zero cholesterol, these mashed potatoes add fiber, potassium, iron, calcium and vitamin C.

Ingredients
- 1 kilo (2.5 pounds of red potatoes, unpeeled, cut into quarters)
- ~½ cup plant-based milk (start with ⅓ cup and add more as needed)
- 1–2 tbsp lemon juice (to taste)
- 1 tbsp grated lemon zest (from about 2 organic lemons)
- 1 tsp ground black pepper
- 1 tsp tamari (or low-sodium soy sauce)
- 1–2 cloves garlic, minced or roasted
- A small handful of chopped fresh parsley or chives for garnish

Directions
Cook the potatoes
Place the potato chunks in a large pot and cover with cold water by about 1–2 inches (2–5 cm).
Add a pinch of salt if you use salt; otherwise skip.
Bring to a boil, then reduce to a simmer. Cook for 12–18 minutes, until the potatoes are very tender when pierced with a fork.
Drain Potatoes
Drain the potatoes in a colander and let them sit for 1–2 minutes so excess moisture can steam off.
Mash Potatoes
Place the potatoes, lemon juice and tamari in the food processor and blend until smooth.
Adjust Flavour & Texture
Add more plant milk, a little at a time, until you reach your desired creaminess.
Taste and adjust:
- More lemon juice for brightness
- More pepper for heat
- A splash more tamari for umami and saltiness
Serve
Transfer to a serving bowl and top with extra lemon zest, black pepper, and fresh herbs if you like.
