Ingredients
- 2 medium ripe peaches, (297 g) pitted and halved
- 1 cup (236 ml) unsweetened plant-based milk (hazelnut, pistachio, oat, almond etc.)
- 2 tbsp (30 ml) maple syrup or pinch of stevia powder
- 1 tsp vanilla extract
- 1 tbsp (15 ml) vodka (see note)
- 1 medium fresh peach, (147 g) pitted, cut into thin slices
Directions
- Place the 2 medium peaches, plant-based milk, maple syrup or stevia and vanilla extract in the food processor. Process until smooth.
- Pour the mixture into the popsicle forms until they are ¾ full. Depending on the forms, press the sticks into the forms now or they are the type that are inserted from above, freeze for one hour and then add the peach slices into the forms and add the sticks. Return to the freezer until completely frozen, around 2 hours.
Recipe Note
Note:The addition of the vodka will keep the popsicles from becoming hard frozen. If feeding to children, leave out the vodka.
Equipment: Food processor, popsicle forms, wooden sticks
