Puffy Oven Pancakes

These pancakes are sometimes called Dutch Baby Pancakes, or German Pancakes and are similar to a large Yorkshire Pudding.  This recipe allows for you to bake the pancake in one large skillet and serve it "family style" which works great for a lazy family weekend breakfast.

  • 2 Tablespoons of butter
  • 2 Large eggs
  • ½ cup 60 grams of All Purpose flour (preferably organic)
  • ½ cup milk can use Whole Milk or 2% or even Lactose Free
  • Pinch of salt
  • Fresh Fruit Maple Syrup or Stevia powder for decoration

  1. Preheat oven to 400 degrees Fahrenheit (204 C). Melt butter in an 9 inch pie plate for a few minutes, in oven and brush the sides of the pie plate with the melted butter. Be careful not to burn the butter.
  2. Beat eggs slightly in a medium bowl with a hand whisk. Beat in remaining ingredients (not fruit or sugar for decoration).  Do not over beat. Pour into pie plate.
  3. Bake for 25 to 30 minutes or until puffy and a deep golden brown. It should be very puffy. Decorate quickly with fruit, sugar and serve immediately.
