Need a beverage that is elegant and flavourful but no alcohol? This is your drink. Fast to make and sugar free, refreshing on a hot summer day.
Flavours: Sweet and tart, it hits all the notes and gorgeous too.
Benefits: Using some stevia, this one is sugar free and healthy.
Yield: 1 litre, 4 servings

Equipment: Saucepan, knife, zester, lemon squeezer, strainer, large bowl, margarita glasses

Ingredients

3¼ cups (770 ml) water

2 small pinches stevia powder

2¼ cups (275 g) rhubarb, chopped coarse

juice, 1 lemon

extra rhubarb for ribbons

cocktail skewers

4 raspberries
Directions
In a saucepan, boil the water and stevia powder. Add the rhubarb and simmer for 5-7 minutes. Use the strainer to drain the pink coloured water into a mixing bowl. Do not press as this may push pulp into liquid. Add the lemon juice. Refrigerate for 30-45 minutes or until chilled.
Serve with garnishes such as rhubarb ribbons woven onto the skewers and add raspberries on the skewers and into the bottom of the margarita glasses. Ice can be added as well.
