Sauteed Zoodles

Sauteed Zoodles

As we all try to increase our consumption of vegetables, one simple way is to switch pasta for zucchini noodles, or Zoodles.  If you have a spiralizer, making these noodles is a breeze!

Ingredients

  • 2-3 Zucchini raw and washed ends trimmed
  • 2-3 cloves of garlic
  • Avocado oil or other high temperature oil
  • 1 medium onion diced
  • Salt and Pepper to taste

Instructions

  1. Set the spiralizer on the blade for spiral noodles (you may have several blades). Put a bowl under the spiralizer to catch the zoodles.
  2. Set each zucchini in the spiralizer and crank the handle until each zucchini is completely cut. You will end up with a circular core. You can chop it up and put it in with the zoodles or discard if you prefer.
  3. Once all the zucchini has been cut, toss it with 1 -2 Tablespoons of oil and salt and pepper.
  4. Heat a medium sized frying pan with Avocado oil until hot.
  5. Add the onions and sauté for 3-4 minutes. Add the garlic and stir constantly.
  6. Add the zucchini and stir to evenly distribute the onions and garlic.
  7. Sauté on medium heat for 5-8 minutes depending on how tender you prefer the zoodles.
  8. Serve hot.

Equipment: Spiralizer, Frying pan, Medium mixing bowl, Sharp knife
