Sauteed Zoodles

As we all try to increase our consumption of vegetables, one simple way is to switch pasta for zucchini noodles, or Zoodles. If you have a spiralizer, making these noodles is a breeze!

Ingredients

2-3 Zucchini raw and washed ends trimmed

2-3 cloves of garlic

Avocado oil or other high temperature oil

1 medium onion diced

Salt and Pepper to taste
Directions
Set the spiralizer on the blade for spiral noodles (you may have several blades). Put a bowl under the spiralizer to catch the zoodles.
Set each zucchini in the spiralizer and crank the handle until each zucchini is completely cut. You will end up with a circular core. You can chop it up and put it in with the zoodles or discard if you prefer.
Once all the zucchini has been cut, toss it with 1 -2 Tablespoons of oil and salt and pepper.
Heat a medium sized frying pan with Avocado oil until hot.
Add the onions and sauté for 3-4 minutes. Add the garlic and stir constantly.
Add the zucchini and stir to evenly distribute the onions and garlic.
Sauté on medium heat for 5-8 minutes depending on how tender you prefer the zoodles.
Serve hot.
