Ingredients

1 cup 200 grams of sugar (substituted 1 cup of Stevia in the Raw which measures as sugar = reduction of 773 calories)

28 grams of butter and 85 grams of plain yoghurt or 113 grams of butter

2 eggs slightly beaten

3-4 medium sized bananas mashed

1 teaspoon white vinegar

3 tablespoons milk

2 cups 240 grams all-purpose flour

1 teaspoon baking soda

½ cup chopped nuts (walnuts, pecans, almonds etc)
Directions
Preheat oven to 350 degrees Fahrenheit or 175-180 C.
In a medium mixing bowl, cream sugar (or stevia) with the butter (or yoghurt + butter); add slightly beaten eggs and mashed bananas to the mixture.
Add vinegar to milk in a measuring cup. Stir a few times until it begins to curdle then add to the banana mixture.
In a separate small bowl, mix the flour and baking soda together. Then add the flour and baking soda mixture to the banana mixture and stir until thoroughly mixed but do not over mix. Fold in nuts and mix slightly.
Pour into a greased and floured 8”x4” (20.32 centimetres X 10.15 centimetres) loaf pan. Push the batter slightly higher at the edges than at the center.
Bake 1 hour at 350 degrees Fahrenheit or until a toothpick inserted in the center comes out clean. Remove from oven and let cool for an hour before serving.
