If you want a quick breakfast that looks and tastes like scrambled eggs, this is your ticket. Healthy and oil free. Add it on top of toast or just eat it in a traditional manner, it will not disappoint.
Flavours: The black salt gives it an eggy taste and the texture is crumbly just like scrambled eggs. Nutritional yeast gives it a pleasant cheesy flavour.
Benefits: Gluten-free, oil-free and no eggs required means it has zero cholesterol and is high in protein. It also has a large dose of potassium and some iron and calcium.

Ingredients
- 12.3 oz (350 g) low sodium silken tofu or firm tofu
- 1 tbsp nutritional yeast
- ¼ to ½ tsp black salt (when crushed is actually pink)
- 1 tsp garlic powder
- ½ tsp red pepper flakes
- ¼ to ½ tsp turmeric powder
- 1-2 tsp water
- 2 pieces of whole wheat toast
- ½ avocado, mashed
- 4-6 cherry tomatoes
- 4-6 slices onion, diced
- bean sprouts
Directions
- Drain the water from the tofu and place into a medium mixing bowl. Crumble the tofu with your hands. Add the nutritional yeast, black salt, garlic powder, red pepper flakes and turmeric powder to the mixing bowl and mix until it looks like scrambled eggs.
- Heat the non-stick pan over medium high heat. Put 1-2 tsp of water into the hot pan and swirl around. Add the tofu mixture into the pan and sauté for five to 7 minutes until it is heated through.
- Serve immediately over toast and add garnishes as desired.
Recipe Note
Equipment: Non-stick pan and wooden spoon.
