Vegan Oil Free Caesar Salad with Mixed Baby Greens and Vegan Parmesan Cheese

Caesar salad re-imagined with salad dressing and cheese that are vegan and oil free. Using baby greens, the nutritional value increases and the taste is sensational. Not only are calories for a salad 25% less than a traditional Caesar. But the really big differences are on fat and saturated fat as well as the sodium. For the salad dressing, taste this one blindfolded against the “other” Caesar salad and you tell me what you think. This one is healthier and no sacrifice on taste at all. In fact, have another helping. Eat your veggies. I like this over grilled cauliflower as well as the traditional Caesar salad. Also, if you cannot give up cheese, this one might give you pause. Add this to the Vegan Caesar salad or other foods you love to add a bit of Parmesan.

 

Ingredients

Vegan Oil Free Caesar Salad with Mixed Baby Greens & Vegan Parmesan Cheese

  • 100 grams of Organic Mixed Baby Greens
  • 4 tablespoons Vegan Caesar dressing
  • 1/2 tablespoon vegan “Parmesan” cheese
  • 32 sourdough croutons
  • capers small optional

Oil Free Caesar Salad Dressing

  • ½ cup raw cashews
  • 2-5 garlic cloves taste after 2 and see if it needs more
  • 2 tablespoons fresh squeezed lemon juice
  • Lemon zest from ½ lemon
  • 2 teaspoons Dijon mustard
  • 2 teaspoons capers drained
  • 1-2 teaspoons tamari
  • Up to ½ cup water
  • Fresh ground pepper

Vegan Oil Free Parmesan Cheese

Vegan Parmesan Cheese

  • 1 cup raw cashews
  • 2-3 garlic cloves taste after 2 and see if it needs more
  • 3 teaspoons fresh squeezed lemon juice
  • 6-8 tablespoons nutritional yeast
  • 1 teaspoon tamari
  • ½ teaspoon fine sea salt
  • 2-3 teaspoons garlic powder

Instructions

Oil Free Caesar Salad Dressing

  1. Blend in food processor and adjust additional ingredients to taste. Serve immediately. It will keep in the refrigerator for a week.
