Serve up this Watermelon Mint Salad with Cashew Ricotta on a hot summer's day. It’s incredibly easy, and oh so tasty!

Ingredients
- 5 cups cubed watermelon, seeds removed
- 20 mint leaves, most torn but a few left for garnish
- zest of 1 lime,
- Juice of 1 lime
- ¼ cup black sesame seeds

½ cup cashew ricotta

Directions
Cut watermelon into cubes and remove seeds. Tear mint leaves except for a few for garnish on whole bowl and for serving. Tear pieces of the cashew ricotta and distribute over the salad. Pour lime juice and zest over the fruit and mix lightly. Sprinkle black sesame seeds on the salad. Serve cold.
